Ahhh. The busy holiday season is behind us and now we must get ready for another maple syrup season. It’s also a busy time, as we have to replace older lines and run new ones, replace all of the spouts, and clean equipment and storage containers, as we get ready for boiling. And, how can I forget …. there’s lots of wood to be split! However, the true labor of love is now upon us with all that nature has to offer. Getting to be outside in the fresh air, anxiously waiting and watching everyday to see how the sap is running, seeing wildlife, and enjoying the quietness of the woods. It’s also a time that I am reminded of how fortunate we are to have this opportunity, feeling that deep appreciation for my grandparents for all of their hard work and for my mother for her generosity. This is incredibly humbling and fills my soul with so much gratitude. Our hope is to be able to share this with all of you someday when we know that we can gather safely.
